Light vs. Dark Roast
My morning ritual includes a spectacular cup or two of coffee, with a preference toward lighter roasts. But have you ever stopped and thought about what roasting does to the coffee beans and how that impacts your cup of joe? Well, let’s take some time to smell the coffee and understand the roasts…
First the Look – Light-roasted beans have more moisture, which makes them dense and lighter in color; while dark-roasted beans are almost black in color and have an oily sheen adding more body to the brew.
Second the Flavor – Light-roasted beans are sweeter, brighter and more acidic, while dark-roasted beans are bitter, chocolatey, and less acidic.
Third Caffeine – Which one has more? Technically, light roasts have more caffeine, BUT, the way you brew the coffee actually has more of an impact on caffeine amount. So… to light roast, to dark roast, whichever roast, let’s make a coffee toast!

But First Let’s Have Some Nuts
Some nutty news out there – according to researchers from the University of South Australia, eating nuts on a regular basis may help boost brain health. Specifically, they found eating 10+ grams of nuts a day had a positive effect on thinking, reasoning and memory. The research was done in China with more than 4,800 participants age 55+. Nuts are believed to be anti-inflammatory and are high in healthy fats, protein and fiber. I guess being in a nutty mood isn’t all that bad.
